A Crowd-pleasing Chocolate Guinness Cake for your St. Patrick's Day Celebration
INGREDIENTS
FOR THE CAKE
- 1cup Guinness
- 5 Tablespoons of butter
- 1/4 cup of olive oil
- ¾ cup unsweetened cocoa
- 2 cups sugar
- ¾ cup sour cream
- 2 large eggs
- 1Tablespoon of vanilla extract
- 2 cups of all-purpose flour
- 2½ teaspoons baking soda
FOR THE FROSTING
- 1 cup confectioners' sugar
- 8 ounces cream cheese at room temperature
- ½ cup heavy cream
- 1 teaspoon of vanilla extract
DIRECTIONS
1. Heat + Prep
Heat oven to 350 degrees
Spray a 9-inch springform pan with your choice of cooking spray, then line it with parchment paper.
2. Make the cake:
Add the Guinness and butter to a saucepan and slowly heat until butter is melted. Remove from heat and add the olive oil, sugar and cocoa. Slowly whisk (to avoid getting cocoa everywhere!) to blend everything together.
In a separate bowl, add the eggs and whisk lightly. Add sour cream and vanilla and whisk all together. Slowly add this to the Guinness mixture.
Time to add the dry ingredients. Add the flour and baking soda, then slowly whisk to combine. The mixture will be fairly smooth.
3. Bake:
Pour the cake mixture into the prepared pan. Bake approximately 45-50 minutes until a toothpick comes out clean. The cake will rise slightly during baking.
Remove from oven and cool completely on a wire rack.
4. Make the frothy frosting:
Using a handheld mixer, blend the cream cheese and confectioner's sugar together. It will be a bit stiff at first, but should becomes smooth with no lumps. Add the heavy cream and vanilla to lighten up the frosting until a spreadable texture.
5. Frost the cake:
Remove cake from pan and place it on a plate or cake stand. Frost the top of the cake, and allow some frosting to ease down the sides, until it resembles a frothy pint of Guinness!
