I love a complex cocktail with lots of ingredients, but summertime calls for something easy! So I created this simple, 3-ingredient cocktail highlighting one of my favorite summertime treats: ripe, sweet + juicy blueberries!
The key to this cocktail is the blueberry simple syrup. And trust me, once you try it, you'll want to use it in everything (your latte, as a punch to a glass of sparkling water, or a sweet addition to a glass of Prosecco!)
And another thing I love about this cocktail is that you can swap out ingredients (use lime instead of lemon, or use gin or tequila in place of the vodka). Or for you mocktail fans, this makes a refreshing mocktail by swapping out the alcohol with club soda! I've included a few versions for you to try below.
3-Ingredient Blueberry Cocktail - 3 ways!
1. MAKE THE BLUEBERRY SYRUP
Ingredients:
1 c. sugar
1-1/2 c. water
1/2 c. blueberries
Combine all ingredients in a small saucepan and stir together. Bring it to a light boil then reduce the heat to low. Simmer for 30 minutes to allow all ingredients to mingle. Strain syrup from blueberries. But wait! Don't discard those gorgeous berries that have simmered in that sweet sauce. Use them for garnish on a cocktail, or add them to yogurt or have them as a sweet snack!
2. MAKE THE COCKTAIL - SERVED UP
Makes 2
4 oz. Vodka
1 oz. Fresh squeezed lemon juice
1 oz. Blueberry syrup
Combine all ingredients into a shaker with ice and shake vigorously. Strain into 2 cocktail glasses. If you're feeling fancy, garnish with a sprig of rosemary or mint.
3. MAKE THE COCKTAIL - SERVED OVER ICE
Makes 1
2 oz. Vodka (or use Gin or Tequila)
1/2 oz. Fresh squeezed lime juice
1 oz. Blueberry syrup
Combine all ingredients into a glass and give a light stir. Top with lots of ice. If you're feeling fancy, garnish with a slice of lime and a few fresh blueberries or a sprig of thyme.
Makes 1

Club soda or your favorite sparkling water
Combine Blueberry syrup and lime juice in a glass and give a light stir. Add ample ice to the glass and top with club soda. If you're feeling fancy, garnish with a slice of lime and a few fresh blueberries or a sprig of thyme.
